Don Hugo

Last year, we were pleased to offer a stellar coffee from Carlos Perdomo, a young renaissance man in the world of coffee. At 18, Carlos impressed us with his work ethic, discipline, organization, and maturity. Carlos told us, “My parents taught me to work early on, so I make something of myself.” For this reason, it was no surprise for us to learn that he had ventured to the Netherlands to study English and was trapped when the pandemic hit, preventing him from returning to his family’s farm in time for the harvest.

“Coffee represents my family’s life, my great-grandparents’ lives. It is what has given us everything,” he told us. Luckily for us, his father, Hugo Perdomo, who instilled this work ethic in Carlos, was able to pick up where he left off. 

Hugo fermented the mucilage in barrels for 100 hours. The beans were washed, floated, and separated from lesser quality beans. Finally, the coffee was dried slowly on a covered patio for 35 days.
