Maria Elita has been a coffee farmer for 30 years in La Plata, Huila. It’s a trade that she took up after receiving training at a State-run technical institute. The training she received gave Maria Elita another perspective on managing her farm by using better techniques that lead to social, environmental, and economic sustainability.
Maria Elita’s husband and children work on her farm, and during the harvest, everyone chips in and carries their respective workloads to process the farm’s coffee. Four years ago, they began working with a local association that helped her family to develop high-quality coffees. They learned about several processing methods, which included controlled fermentation, which is how she processed this beautifully delicate semi-washed coffee.
She is passionate about her lifestyle on a coffee farm and embraces the cuisine and culture of the coffee-producing region in Huila. Further, Maria Elita is passionate about processing specialty coffee and tries daily to improve her methods and techniques in fermentation and drying. She sees specialty coffee ask the means to become a self-sustainable coffee farmer.
